Banana Muffins

Just made some banana muffins from a recipe mum gave me. Not really my typical post for this blog but what the hell, you can make this late at night if you like, only 20 minutes.



With this recipe I didn't use the vanilla essence, but it still worked.

Ingredients:
2 and 1/2  cups self-raising flour
3/4 cup brown sugar
1 egg
2 tablespoons margarine (melted)
250ml milk
1 teaspoon vanilla essence
2 ripe bananas (mashed)

Method:
Preheat oven to 180 C,  and grease a 12 hole muffin pan. Sift flours into a large bowl,
stir in sugar and make a well in the centre. In a small bowl whisk margarine, milk,
egg, vanilla and banana using a fork, then add to flour mixture and stir gently to combine.
Spoon into pan and bake for 20-25 minutes or until muffins are well risen.
Cool on a wire rack.
